This easy pork carnitas recipe can be cooking while you are away at work or busy working outside! Take 10 minutes to prep and 10 hours to cook in your crock pot, slow cooker.
Ingredients needed:
3-4 pound Prairie Pride pork shoulder/butt roast, bone in or boneless
1 teaspoon kosher salt
1 teaspoon garlic powder
1 teaspoon ground cumin
1/2 teaspoon dried oregano
1/2 teaspoon ground coriander
1/4 teaspoon ground cinnamon
1 orange cut in half and squeezed over meat.
1/2 cup water or chicken broth
Method: Pour water into slow cooker. Mix all ingredients together, rub over roast, place in slow cooker, set on medium or low. Takes about 8-10 hours, depends on your cooker, but cook until the meat falls apart when shredded with fork.
Serve on a soft or hard shell taco, garnish with fresh salsa, avocado, and squeeze of lemon, if desired. A garnish of shredded lettuce or fresh cabbage is also great!
Left over can be used to make a carnitas burrito wrap, or top over a lettuce salad.
