The Nicollet County Fair was the highlight of our summer. I belonged to the Oshawa 4-H club for 12 years. One of my club projects was baking. My Mom taught us how to bake bread and rolls on Saturday mornings. This roll recipe won many blue ribbon and even a few champions! Enjoy!
Mix together and let sit until needed:
- 1 pack of dry yeast (quick rising)
- 1/4 cup of warm water, not too hot
Stir together in a large bowl:
- 2 cups of warm water
- 1/4 tsp. salt
- 1/2 cup sugar
- 1/2 cup lard https://www.prairiepridefarm.com/product/open-kettle-rendered-leaf-lard-ready-to-use/
- 2 lightly beaten eggs
Blend together:
- 3 1/4 cups white flour (half whole wheat or rye if you want)
- 1/2 cup dry milk
Add yeast mixture to water and egg mixture, stir gently, in a large bowl. Add flour and dry milk blend, with a wisk, getting the lumps out. Add an additional 3 1/4 cups of flour, a little at a time, this will turn into dough, and pull away from the sides of the bowl. You may need to add a little more flour if the dough remains sticky.
